Making Myself Great Again

I fully intended to write a blog outlining each day of this historic week. Being a Canadian I’m not obligated to kiss anyone’s ass, be it a Democratic or a Republican one. As each new day unfolds, however, it’s revealing even more obscene declarations from this new administration. This is defying all logic for me to make any sense of what’s going down here.

I can’t seem to get past Day One, blanket pardoning fifteen hundred convicted felons back into the streets. At the same time, signing a declaration to deport ten million illegal and supposedly ‘criminal’ immigrants. True it was a convicted felon himself pardoning all the ‘peaceful demonstrators’ that accidentally killed five police officers and sent many more to hospitals… but…

Soooo… I’m mentally flushing it all and moving on with my life. If I find it impossible to flush what’s happening here then I’ll deal with it accordingly. Mexico is only fifteen minutes from here and it’s looking better all the time.

The weather has turned cooler but we seem to be the only place not getting snow or fires burning down whole communities. I saw the snow in Florida and some places didn’t even own a snowplow! The fires in L.A. and even San Diego are horrific and I can’t even fathom how they are going to deal with so many being homeless and losing everything! Many didn’t even have insurance, because companies were refusing insurance to them.

Amid all this devastation that’s happening in the United States of America, is an unhinged leader dividing the country even more. Omg, how much worse can it get I wonder…

I’m putting on my big girl panties and maybe someone else will take over all this worrisome shit. I’m also putting on some warm clothes and venturing out to the outdoor Farmers Market this morning. I was there last weekend and discovered lots of fresh reasonably priced produce and I bought a few things, including lettuce. Yep, a head of lettuce, I was feeling optimistic that I wouldn’t let this one die a slow death in my fridge.

It took a while to get away from all the bling tables with every piece of jewelry catching my eye. Once home though, I took that head of lettuce and chopped it all up, along with fresh cucumber, sweet onions, and organic baby tomatoes. I put it all into a big plastic bowl with a lid and deposited it into my fridge. Just so you know, I did this once before (not from the farmers market) over a month ago, and had to throw over half of it out after a week.

So there I was, not really wanting to eat a lettuce salad but, but… how can I justify making all that effort just to let it sit and rot there? I had also bought a package of flour tortillas a while back and they were also taunting me whenever I opened that fridge door.  I had never made anything with a flour tortilla but thought I should make an effort.

Well, guess what? Inspiration hit me between my eyes as I looked at that bowl of greenery and that package of tortillas! I pulled both out and also whipped up my homemade salad dressing, from the olden days (Miracle Whip, and sweet pickle juice :  ) Loading some salad onto the tortilla I  sliced a cucumber lengthways to take the place of a protein. I drizzled some dressing and then had a brainwave to scoop some mango salsa on top as well.

The hardest part of all this was trying to encompass the salad in the wrap, so I could wrap my hands around it all to eat it. This first one was cone-shaped and I can’t lie, it was messy, make sure to have napkins handy. YUMMY … omg kill me now, I loved it. Two days later I made it like a taco with the tortilla and this was also messy as hell, I used less dressing and more mango salsa.

I suppose you could add shredded cheese, but that’s not for me. Long story short, that huge bowl of salad is toast and I am very proud of myself. I know, but it is the little things sometimes, I didn’t have to throw out any lettuce, and that’s a biggie for me. So here I am making a huge adjustment getting greens back into my life. The farmers market also has warm, freshly roasted sweet peppers, that are going to make an appearance in my salad wraps.

I’m excited as hell to see what else I can do with my new way of eating greenery… and I’m feeling pretty great.  It’s the little things in life that contribute to our well-being and I just wanted to share this one with you. Maybe try this if you’re looking for a change, oh, and fresh mango salsa is awesome on Ritz crackers for a late-night snack and you’re welcome  ;  )
